I've always called them "hibernacula", though I have no great
objection to "winter resting buds" (even if it's a little more
long-winded,) but if choosing a non-Latin name for this,
what can we call gemmae? "Brood bodies" (a la Pietropaolo,)
just sounds horrid to me.

I'd stick with the Latin. When in doubt pinch a foreign word -
it's a philosophy that's worked well enough for the English
language over the last thousand years :)
